The very bestest pancakes

If you have ever had pancakes at IHOP, you might have tried the Harvest Grain Pancakes. I discovered this recipe and modified it for a sugar-free diet. Top with fruit sauce or sugar-free maple syrup and serve with turkey sausage. Delish!



Harvest Grain Pancakes



1 1/2 cup oatmeal, ground fine

1 1/2 cup whole wheat flour

2 tsp. baking soda

1//4 tsp. salt

1/3 cup Splenda

1 1/2 cup buttermilk

1 cup skim milk

1/4 cup vegetable oil

1 egg

1/4 cup nuts, chopped



Combine all dry ingredients (first 5 listed). Combine all wet ingredients (items 6-9 listed). Add nuts. Oil saute pan or griddle and heat to medium heat. Spoon onto hot griddle and cook 2-4 minutes on each side or until golden brown.



If you do not need this much batter, do not cut the recipe in half. Make the full recipe and cook all of it. This recipe freezes well and just pop into toaster to reheat.
