No Knead Bread

Haven't tried this one yet, but sounds tasty to me. Warm from the oven, and toasted, with butter and sugar-free jam.... Have I got you yet?

No Knead Bread

1 tbsp. dry yeast
3 cups warm water
1 tbsp. sugar (yes....I said sugar...the yeast needs it as fuel)
1 tbsp. white vinegar
1 tbsp. vegetable oil
3 cups All-Purpose Flour
2 1/2-3 cups Whole Wheat Flour
1 tsp. salt (optional)

Mix yeast in warm water and sugar until foamy. Add vinegar and oil. Stir in all-purpose flour then 2 1/2 cups of wheat flour. If the dough is very damp, add additional wheat flour. Leave in bowl, cover with damp kitchen towel, place in warm place and let rise until doubled (approx. 40-60 minutes). Divide in half, and place in 2 well-greased loaf pans. Cover with same damp towel and let raise until doubled (approx. 40 minutes). Bake at 375 degrees for 50 minutes or until it sounds hollow when thumped on.

Sugar Free Barbeque Sauce

Tom LOVES to grill out. He loves everything about it. And has been known to do it in a leather coat, in below freezing temperatures, with snow on the ground!

He also loves this sauce. I have adapted a recipe that I found online to fit a sugar-free lifestyle.

Sugar Free Barbeque Sauce

1 qt. tomato puree or cheap catsup (if using the catsup, watch the amt. of sugar added)
1 pt. water
2/3 cups Worcestershire sauce
1/2 cup cider vinegar
1/4 cup vegetable oil
8 oz finely chopped onion (I use 3 tbsp. chopped dried onion)
4 tbsp finely chopped garlic (I use 2 tbsp. garlic powder)
1/8 cup Splenda (but if using catsup, omit the sweetener)
1 tbsp. dried mustard powder
1 tbsp. chili powder
1 tsp. ground black pepper
salt to taste, optional (I NEVER add salt!)

Combine all ingredients in large stockpot and simmer over medium heat for 60 minutes, or until thickened slightly.

This recipe stores well in the fridge and lasts a long time (2-3 months). It is excellent on chicken, pork tenderloin, and any kind of ribs. Have even poured it over meatballs and served warm as an appetizer.
